
Here at Hi-ReS! we are lucky enough to have a studio manager who moonlights as a rather excellent chef, prompting some of us to wonder if we should open a catering business on the side. Like an extremely polite version of Gordon Ramsay, Nico bestows upon us simple but lovely food rustled up from ingredients so humble they are readily available at the local Tesco Metro. We thought it was high time we documented them for future generations. These recipes have all been tested in the Hi-ReS! kitchen (which consists of a heavily abused espresso machine, and only slightly less abused toaster, microwave and kettle), and given a very discriminating taste test by hungry coders. Today, from his summer menu, we present Nico's simple mackerel salad.
Ingredients (serves 3-4): Mixed salad leaves (bag), berry mix (bag), smoked mackerel (1 per person), avocado (1/2 per person), 1 slice wholegrain bread, toasted (1 per person), 1 pot of houmous, plus fresh coriander, sea salt and olive oil to serve
Arrange the salad leaves on a plate, top with berry mix, mackerel, slices of avocado. Garnish liberally with fresh coriander, olive oil, sea salt (Nico prefers Maldon's) and black pepper. Serve with slices of wholegrain toast and a dollop of houmous. Et voila!
